He wears several. In earlier episodes he had a Panerai Ferrari (it was discussed in the dialogue as a gift from a girlfriend). Last episode I saw he wore two, one with black dial (i.e. face) and the other white dial. I am pretty sure that the black one is a Chase Durer Special Forces watch, possibly the Underwater Demolition Team or the Air Combat Team. The yellow and red dial at the 3 o'clock position is the giveaway here. White one could also be IWC. He also wore a stainlees steel Rolex Submariner on a brown strap for several episodes in Season 1.
Sam Axe is wearing a pair of Persols. I'm not sure which particular model (many of their models are similar), but you can see all their models on their website.

He has both. He uses the sword to behead his victims and he throws the axe for long distant kills.

Yes, Bruce Campbell performed many of his own stunts in "Burn Notice." Known for his physicality and action-oriented roles, he embraced the demands of the character Sam Axe. However, like many actors, he occasionally utilized stunt doubles for more dangerous or complex stunts to ensure safety during filming.
No because it only burns the axe, not you. but if you leave it burning and don't shake off the flames after the axe burns away, it may burn you.
