Though Stephen Foster probably played the piano, he's more known for his accomplishments as a composer. Famous for songs "Oh Susanna" and "Camp-town Races", if there were pop stars in the 1800's, he was one of them. He also played guitar, violin, and more, but he mostly is passion it for playing piano. He mostly plays piano because he knows most of his 200 songs on that instrument, although he was also know for playing the Flute and picked up the guitar at a very early age, as well.

He wrote popular songs of a sentimental nature, often with themes related to the lifestyle of the southern black slaves of his time. He was not a Southerner himself but had a great deal of sympathy for the black slaves.

Stephen Foster wrote over 200 songs for minstrel shows and home singing. He never attempted anything as complex as an Opera or a full stage show. It's interesting to think what he might have done if he'd lived beyond 38 years old.
