It depends which knife your talking about. The big one with the ringed handleguards Chavez had in the first movie was a modified bowie knife. The rest of his in that movie were just throwing knives. In part 2 during the knife fight he seemed to be using a double bladed skinning knife. (at least the blades were very skinner looking)

As far as I know, with the exception of a bayonet, the only knife used in the movie is by Micky in the opening diner sequence. It is a Gil Hibben custom.
