Actually, it just means, in a very poetic way, that Edward (the lion, as he is a "vampire") fell in love with Bella (the lamb, as she is a very clumsy human).

Why I say this?

If you take into account that the lion and the lamb symbolism is mostly used by (many) preachers when speaking of the peace that will pervade the entire earth, referring to the time of peace when Jesus will reign as King over the earth (this can be read in a couple of verses that ferocious beasts -lion- will live peaceably with gentle animals -lamb-); that a lot of people also uses this symbolism when referring to two instances or persons that have a tendency to not dwell well, AND the fact that Stephenie Meyer as a Mormon, it all makes sense... as the association of the lamb and the lion in not natural in the world of nature.

If you have read the whole Twilight series you will be able to understand me, since Edward had to be stronger than he already was, in order to be able to love and be with Bella without biting her (and he says so on Midnight Sun, when he struggles with himself in order to keep Carlisle's teachings, fighting his own demons because he is a monster... in New Moon, Aro mentions that Bella is "La Tua Cantante" (Edward's singer) because her blood/scent was so sweet to him, it actually "sang" to him). And overall, all the other obstacles they had to overcome in order to be together while being a dispair pair, until Bella became a Cullen.

well actually the saying came from the movie dumbo. at the end of the movie dumbo it shows some short Walt Disney clip and one called "the cowardly lion" and its about a lion who ends up being raised by a sheep and sheep are kinda cowardly so that's how the lion was and one day the mother was about to be attacked by wolves and the cowardly lion had to gather up his courage and scare off the wolves because he loved his mom (not in a weird way) so yeah. its kinda weird that they turned something between the love of mother and child into actual lovers but yeah.

It is a common misconception of scripture. Nowhere does The Bible say that the lion will lie down with the lamb, but it does say, "The wolf will lay down with the lamb." Isaiah 11:6-9. This passage is also often taken out of context to describe a future millennial kingdom where Christ will rule on earth when in fact the passage is figurative language such as the prophets often used, and which in this case describes the period when the Messiah (Christ) will come. Note verses 1-5 which describes the 'root of Jesse' (more figurative language) which is widely recognized to refer to the Messiah as a descendant of King David (through his father Jesse). Note that the whole chapter uses figurative language. The peaceful atmosphere that the context portrays is that of the Christian life that has changed from a life of sin and turmoil brought on by sin to that of a peaceful life within because of the salvation brought to us by that same Messiah/Christ.
