Gandalf understood Hobbits and he knew that Bilbo would never refuse one or two Dwarf guests. Once they were in, he would be unable to refuse members of their party because that would have been rude. Introducing all the dwarves at once would give Bilbo the right to refuse because there were too many.

Bilbo's personality and outlook on life have been completely changed
Gollum was first known as smeagul but once he found the ring and killed his brother he was then known as Gollum (he got this name when the ring took controlled of him and he started making the chocking noise sounding like the word Gollum). He had the one ring for hundreds of years giving him unnatural long life. He became fixed on the ring and would kill anyone who would take it like he tried to do to Bilbo once he noticed he had lost it. Gollum would not give the ring up easily and tried to take it from Frodo in The Lord Of The Rings. Bilbo had it for much shorter time, so part of his own mind was still in control and was not as obbsessed with the ring as Gollum, and was able to find the will to give it up and pass it on to his adopted heir, Frodo Baggins.
Bilbo Baggins' Diary Entry Dear diary, Today, after having thirteen unexpected guests over at my house I was taken on an adventure. I was only just starting to realize how far this journey would be and how much respect I would lose from my community when we were faced with three nasty trolls. Their names were Bert, Tom and William. They were complete morons. They were also very hungry and thought the dwarves would be perfect for dinner. Thankfully, they had no interest in eating me. Just as the first of the dwarves was about to be cooked, Gandalf made his move. Like me he had noticed that the trolls were not very smart. So when they were not looking he sneaked into the bushes behind them. Then he started teasing them but did it in a way that made the trolls think it was them. Once they were confused and had started fighting with each other, I slipped on my invisibility ring and set the dwarves free. After that Gandalf turned the trolls into stone and we had a lovely dinner. Although it was delicious, it was not a good start to our quest.
