So far, one. It would appear that there are no plans to further the movies, however when the first one was released there was a rumor of a second movie. The first movie was so far off of the first book that chances are they decided after the bad reviews not to make a second movie.

ViviThere is only one movie and that would be the first "Eragon", despite there being three more books in the series it was based on. The movie company didn't get enough good reviews or money to make another, for good reason. It is a terrible adaptation and a sub-par standalone at best, in my opinion.
