Learn Martial Arts to start and once you reach a substantial level you can quit and train with many weapons. Then compare your skills to characters in the show and convert what they do to a real world skill level. Then you can tell if your a jounin or not.

To get Anbu Kakashi, you have to buy everything in the shop. Then complete 20% of everyone's mission(two missions for all characters and yes it has to be hokage or head ninja or mixed). Next beat 40% of Kakashi's missions(four missions, all hokage or head ninja or mixed). Last you redo Kakashi's S-rank mission and Anbu Kakashi will be the person your battling insted of Guy. Once you beat him he will be in the shop. This hasn't happened to me but if he is not unlocked in the shop once you beat him, then just beat him again. Hope this helps!
