In movies 1-5 she just helps to keep the school and students in order when bad things happen, she is head of Gryffindor in Hogwarts.

At the end of 6 she helps to fight and at the end of seven she helps to hide Harry then to evacuate the students before joining the fight with all the of age students which are mainly the seventh graders

Mind you, reading the books is a lot more fun and figuring that out by yourself then just looking it up!

In the series, Mcgonagall doesn't die. At the end of the seventh book, she's very much alive and remains at Hogwarts. She then becomes the Hogwarts Headmistress for a couple of years. Rowling has later stated that she is retired by the time Harry's children are at school; by that time, she would be very old.

In the series itself, she just gets very badly injured in the 5th book, the Order of the Phoenix. There, she opposes to the fact that Hagrid is arrested and she gets stunned and put in Hospital for a couple of weeks.

She is still there in the seventh book, but she is not mentioned in the epilogue of Deathly Hallows, so we do not know what happened to her after that. There may be information about this on pottermore- I know they have a backstory for her.

Professor McGonagall did not die. After Professor Dumbledore died, Professor Severus Snape became the new headmaster of Hogwarts. When Snape died, she takes his place as headmistress.
