There are exceptions to just about everything in the English language, but the general rule for apostrophes is purely for possession. There are very very few cases where apostrophes are used to indicate plural.

If there were many mothers it would be: moms

If something belonged to the mother it would be: mom's

Ex: My mom's wrist hurt after making so many sandwiches for my dad.
