Probably bacause another image is in Grayscale Mode. Image you try to drag and drop must much Color Mode of another image so it is converted on the fly to Grayscale (Black and White). To change Color Mode go to Image > Mode > choose RGB.

A histograpm analyzes the contrast of an image in Photoshop. The histogram is a visual representation of the amount of tone at every level from 0 (black) to 255 (white).
To select all black elements in an image using Photoshop, you can use the Magic Wand tool or the Color Range tool to make a selection based on the color black. You can then refine the selection as needed to isolate and work with the black elements in the image.

Desaturate takes all of the color (saturation) out of a photo to make it Black & White.
You first need to create a "mask" (Photoshop has a special name for these that I don't recall at this moment). Then using the mask you can tell Photoshop to convert the unmasked portion of the photo from color to black and white.
