The throttle is sticking, check on the throttle body for something holding it open, the reason it stops when you shut it off is because you stop the flow of fuel.
If this is a general noise, it could be the transaxle. When you are accelerating, the engine is pushing the gears, and when you let go of the pedal, the vehicle starts to shift back down. If this is an engine noise, it could be predetonation or a valve problem.
when kick down the gas pedal to accelerate, the car downshift but then stalls and then engine stays rough until i turn off the engine and restart it then the engine runs normal again till the next kick down.
Push the gas pedal about halfway down, then release it real quick.

If it is a turbo, it could be the turbo winding up. I had an Audi with 2.7 T engine that would whistle / whine when accelerating. You could have an air leak in the inlet manifold or plenum.
It's a reference to driving, esp cars from the '50s. The throttle is wide open when the (gas) pedal is fully depressed. With really old cars the floorboards are metal so with the "pedal to the metal" your accelerating as much as possible.
Open your hood and have someone press and release the accelerator pedal while you look for movement at the end of one of the cables on the top of the engine. That is the throttle.
Spark plugs need changing. Also check the wires.

with the ignition key on but engine off , fully push and release the gas pedal slowly three times with in five seconds
a "knocking" noise could be your lifters. and the ticking when accelerating and letting out of the gas is the same thing. check your oil and if it's full then you may need to think about either having them adjusted, or getting new ones. depending on what you have depends on whether or not you wanna sell it
This happens rarely, but has happened to me a few times. What I have learned is, I depress the pedal and start it up again, and this seems to work (leave the pedal depressed and release when it starts up).
