None. If you remove the relay which provides power to the electronic engine controls, the whole thing shuts off. Then, your speed is reduced to zero. I heard some people remove a fuse which will kill many things including the speed limiter but that isn't really safe. The better solution is to get a unichip which would in the same time add some horsepower as well as removing the speed limiter

Its normally on a fuse. I can't see why you'd want to do this though. modern trucks with electronic fuel systems operate the speed limiter seperately to the speedo
under the hood you should find a small 10A or 15A fuse. There is a separate fuse for the trailer turn signals.
