Can be easy or a bit difficult depending on model. - (not all GE refrigerators are the same, we need model#)
To GE model GSSxxxx models, there is no defrost timer. It uses the main control board to time it.
The defrost timer sometimes is built into the main board
the clicking you hear is more then likely just a noisy defrost timer..in some ge refrigerators the defrost timer is mounted close to the temp control.
the defrost timer is part of the circut board that has your ice cube selector switches on it..rite above where the ice comes out on the outside of the freezer door..
The GE gswf filter needs to be changed periodically. There is usually a light indicator inside the refrigerator which turns red when the filter needs to be changed. For more information, consult the manual for your GE refrigerator.

You can go to the following website to purchase extra or replaceable ge refrigerator parts https://www.geapplianceparts.com/GEApplianceParts/Dispatcher
If a refrigerator doesn't work, one should defrost the machine and bring all the settings down to zero. If there are hot areas in the refrigerator, the condenser area should be cleaned. If this doesn't work and the refrigerator still doesn't operate, then one should call the GE refrigerator repair man or woman. Some of the food may have frost inside the packaging. This is no problem and is considered usual. Special and persisting problems with the defrost unit would require specialized services of the repair people. Making sure the condenser area is clean provides preventive maintenance on the unit.
There is an automatic defrost setting that user reviews indicate is mostly effective.
You can find parts for your GE refrigerator on their official website: https://www.geapplianceparts.com/. You can also check other vendors online that may carry GE as well.
