Oak as you probably know is very expensive, so if it's in good shape, skip the paint, keep the oak and take a digital picture of the wainscoting and take it to a wallpaper store and match up some wallpaper. It's a matter of taste and both look good, but wallpaper gives it a more cozy feel. If you are adamant on painting your oak wainscoting then white looks crisp and clean.
Oak is the easiest to find hardwood in most areas. It is very durable and it tends not to fade as quickly as a less dense wood. It is quite expensive. Mahogany is very beautiful and should be stained not painted. Avoid using pine in furniture. It is knotty and uneven. It cracks and swells quickly. Ash is a no no in many areas right now because of the Emerald Ash Borer, but it is easy to work with and not as expensive as oak. Poplar is your next best bet. Beach is also a good choice, but poplar is more consistent in density. If you are painting it a dark color poplar and beach aren't much different. Oak is still the best for durability and lognevity.
Coniferous means that trees or shrubs have cones or pointed needles. Deciduous means that trees shed their leaves annually. While some examples of coniferous trees are firs and spruce, deciduous trees are oak and maple.
Oak and maple tend to be about even in quality, oak can be more durable as maple can look a more elegant but there differences only vary slightly.
