The problem with most breads is that they are made with yeast. Yeast has a high purine content and that is what is responsible for making uric acid. so to reduce the purine you would have to find a bread that is yeast free. and with the replacement for the yeast low in purine.

Anything that turns in to sugar is not good for people with gout

And any foods or beverages made with yeast should be avoided
