With new technology in the finishing industry I would recommend for table tops a pre-catalyzed lacquer, (it dries extremely fast, you can recoat in 15-20 minutes, no time limit on touch-up's, and the catalyzing resins make the lacquer super durable) this pre-cat lacquer will give you a piano finish. note: if your table will be used in a humid area, use a vinyl sealer then the pre-cat lacquer. As for polyurethane, oil based dries slower, water based dries in half the time as oil based, and both are good products that you can use. How to finish, first "NO short-cuts", many people spend many-many hours making a project only to ruin it with a bad finish, if your project is somewhat rough start with 120 grit an progress to finer grits such as 150 grit, 180 or 220 grit, 320 grit, finish with 400 grit, if you like you can go to 500 an 600 grit, now use a air hose to blow off the dust and then wipe down the entire piece with a lint free cloth, (note: some say to use a tack cloth, I don't recommend this for beginners or intermediates, the tack cloth has bees wax in it and if you rub to hard you will cause crazing in the finish) apply your finish, follow the instructions for your second and third coats, allow to dry completely before sanding.
