Since Paciano Mercado was known as Father Burgos' favorite student and helper, Paciano advised Jose to use the family's second surname, Rizal, because the surname MERCADO had already come under the suspicion of the Spanish authorities.
The main reason why he changed his surname, was to keep his family safe from the Spaniards' suspicious noses. And that's why he changed Mercado to Rizal
