Is it exceptionally cold? I'd be surprised if it is. I can't speak for Carlsbad Caverns as I've never visited it, nor studied its formal descriptions and survey, but the mean annual air temperature in most major caves stabilises at that of the air in their local area.

This makes caves seem warm in Winter and cool in Summer, and if the annual temperature range of New Mexico is high then the effect on the region's caves will be more marked. Given that Carlsbad Caverns are in a hot area in Summer, when I imagine it attracts most visitors, the cave will therefore feel chilly compared to the heat outside.

Because they're enclosed spaces that are hundreds of feet below the ground.
