Hot air rises, so the colder the air, the lower it wil be. Okay, now think of the freezers as Swimming Pools filled with freezing cold air! but the air is to cold to float up, because all the hot air gets there first, so it sits in the freezer keeping all the frozen goods frozen...

Because when the food freezes the moisture freezes as well, and if left uncovered dries out the food. If left covered the moisture has no were to go.
