A very small percentage of white bikers who wear swastikas do so because they are racist (usually not Anti-Semitic though). A slightly larger percentage do so because there is an identification in that subculture, even amongst non-White Motorcyclists, with the swastika as the ultimate "evil" or "badness". Also the fact that the Swastika is associated with very brutal, violent, and ultimately self-destructed movement appeals to a certain warrior ethic in the biker subculture. Most however simply wear it as a "leave me alone" deterrent. Bikers get a lot of attention, from people trying to test how tough they are, or people gawking, taking pictures, etc. If someone puts with a big swastika on their jacket or helmet, what better symbol would immediately communicate "leave me the **** alone," more efficiently? As is evident in the fact that many, if not more non-white bikers use swastikas as symbols than white bikers do.

Why do bikers use the iron cross symbol?

I haven't noticed that many bikers using it but if they do you can bet it got its basis from the Wehrmacht bikers during WW2. The iron cross is a German symbol. The Germans were some of the first to employ motorcycles heavily in combat. The iron cross and other symbols like it had their base in the medieval era including the teutonic knights who the Germans used as propoganda. You know how some bikers wear those kaizer helmets with the metal spike on top, or we think of bikers like that, its the same concept.
