Well first off there is only two mummy movies, the mummyand the mummy returns. Unless of corse you count the cartoon(s), or the scorpion king. They were going to make a third movie but Brandon fraser refused to even when they offered him close to 3 million dollors. But in those two movies the cast stayed the same, and the scorpion king was made to give a bit of history for the second mummy movie but its a story all in itself and really has nothing to do with either of the mummy movies.
And if you are counting the cartoon as a third movie then many actors don't do voice work so that's probably why.
actually there is a third movie in 'the mummy' series... its called The Mummy: Tomb of the Dragon Emperor as for the change in cast, i don't know why that happened... i love mrs. o connel portrayed as rachel weisz...
