One reason (there are a lot more) is that in organic chemistry many more isomeres with the same chemical formula exist.

Example:

Na2S2O3: there is only 1 compound

But C2H4O2 has 3 possibilities:

  1. ethanoic acid: H3C-C(-OH)(=O)
  2. methoxymethanal: H3C-O-C(-H)(=O)
  3. hydroxyethanal: CH2OH-C(-H)(=O)
