If they approve of it, you fill their glass and all of the other guests. If it is at a casual dinner - you open the bottle in the kitchen. You give the host or hostess about one inch of wine to taste. If they approve of it, you fill their glass and all of the other guests. If it's a casual affair - you can fill all of the glasses on a tray and serve it to your guests. Wine glasses are normally filled 3/4ths full.

In fine restaurants, the cork is handed to you after the bottle is open, so that you can smell it, and tell the waiter if it is OK to pour it or not. If the cork smells bad, then it is likely the wine has turned bad as well.
