The insurance co will cover only the policy limit/amount, however, you can sue the other driver for the rest. However, the insurance co will ask you to sign a release of all claims, which you should not do if you're still owed money. Just because you don't sign a release, it doesn't mean that the insurance co won't settle with you.
In your case you need to contact an attorney and do so ASAP.
