Carbohydrates are a major food source for life because they can be broken down quickly and the nonpolar covalent bonds (between carbon and hydrogen) store energy while the polar covalent bonds (between oxygen and hydrogen) make it water-soluble. They are also used for storage because very large polysaccharides can be built due to the nature of the carbon skeleton. For example, many animals store extra glucose as glycogen and many plants store glucose produced via photosynthesis as starch in the roots.
