Pureed tomatoes will make a better sauce. While it is possible to boil whole tomatos down to make a great sauce, pureed tomatoes will simplify the process. If you desire chunky sauce, the whole tomatoes may work better.

You can freeze tomatoes in any form, the only effect freezing has on tomatoes is that they will soften when defrosted, similar to canned tomatoes.
Whole Tomatoes. If you store them in ziplock bags in the fridge, they will last for several weeks. When you slice a tomato, the inside becomes exposed to carbon dioxide and oxygen which speeds up the deterioration process. Once you have sliced a tomato, it should be eaten within a day or two.

Raw fruits and vegetables, whole wheat, and other whole grains. In fact, all dietary fiber is found only in plant foods: fruits, vegetables, nuts, and grains. Meat, milk, and eggs do not contain fiber. Canned and frozen fruits and vegetables contain just as much fiber as raw ones. Drying and crushing, however, destroy the water-holding qualities of fiber. Removing seeds, peels, or hulls also reduces fiber content. Whole tomatoes have more fiber than peeled tomatoes, which have more than tomato juice. Likewise, whole wheat bread contains more fiber than white bread.

Sun-dried tomatoes, dehydrated, sliced, diced, quartered, blended, pureed, steamed, stewed, or pasted are tomatoes that were whole tomatoes that have become tomatoes of a different consistency. No, tomatoes are definitely not fattening, they are catabolic. The only cases tomatoes would be fattening is if you ADD fat - like deep-frying them (fried green tomatoes), or making tomato chips (brushing sun-dried/dehydrated tomatoes with oil and baking them)...in THAT case it would be fattening because of the oil working its way into the tomatoes. - Maikel Y.
