You go to them, save, and turn off your game until they are shiny. Unless you want to turn off your ds about 24,000 times, I would recommend just living with having unshiny Uxie, Azelf, and Mesprit. By the way, Mesprit is so hard to catch anyway that it would be incredibly rare to find a shiny one.

Actually, it's really hard to get a Shiny Azelf, Uxie, and Mesprit. Once you encounter them and don't see that they are Shiny, keep soft restarting until you do find one. (It may take up to 200 soft restarts.) You'll need a lot of patience.
