You have to use physical and fierce attacks to push Gollum to the edge. Then when you see he is off-balance and leaning back, fierce or physical attack him to make him fall, and then use a finishing move to hurt him. He will then climb back up and you have to do it again. Note that you can only knock him off if you and Sam are cornering him, and it's very frustrating to get Sam to work with you on this. If Sam starts throwing knives, get closer to him so Gollum will follow you. Also, if you see Gollum about to do the jumping kick where he flies at you (he stands still and growls) get near the edge and move out of the way at the last second so he is on the edge.
