Very often, the slaves were called by the owners last name if seen on the streets of a town, and as such it became commonplace that when referred to, the former slaves gave the owners last name as their own. You have to consider the fact that most if not all slaves were never given any kind of education, so the whole concept of reading and writing was something they knew nothing about.
