It is physically possible to use a microwave oven on the counter that is meant to be mounted but, depending on the design of the unit it could be unsafe, unstable or undesirable. A vent might be covered up preventing proper cooling of internal parts or the unit may not sit level which will cause the food to slide to the back, front or side during cooking. Some units could even allow access to parts that would be covered when properly mounted.
I assume the outlet which is supplied with you gas stove is connected to a 20 amp , 120volt kitchen circuit. Unless the microwave is very large, say 2kilowatts or more, the circuit has ample capacity. I haven't seen many home-use microwaves larger than 1500 watts.

It depends on whether you have a mount for the microwave that has an open bottom or if there is a cabinet over the stove. If there is only a mount then yes there are special over stove micros that bottoms are heat resistant to the stoves heat. If there is a cabinet then you can use a regular micro. Either way there should be a vent from the compartment that the micro is in or it could over heat. The special micros have a built in vent that can double as the stove vent.
