Kupwurst is a old time recipe. The ingredients are beef, onions, salt, allspice and sometimes pepper. The beef is cooked with bones (bones are needed for the broth). The beef is then separated from the bones (bones are then thrown away) and broth (broth is saved). The meat is then run through a grinder (fine cut), and set aside. the onions are cooked and also run through the grinder. Then the beef, onions, salt, allspice and pepper if used) are all put into a mixing tub and mixed well. You then put the mixture into a NESCO type roaster, add broth (not too much) and simmer for 2 to 4 hours to flavor through.

You can than freeze the kupwurst in batch sizes of you choosing

A 10 pound batch consists of:

2 - 3 pounds beef bones (ask your butcher for them)

10 pounds beef, cooked and drained

6 pounds onions, peeled and cut up

3 ounces salt

3/4 ounce allspice

pepper to taste (if using)

I use to eat kupwurst as a kid and still do when I make it to the meat market in Baraboo Wisconsin. I believe My uncle Mike created the recipe for this tasty breakfast meat. Kupwurst normally comes in bulk form, like square chunks. If it's frozen, just take it out and let it thaw. My Grandma use to put it in a hot skillet with some butter, Then fry it up untill you had it as crispy as you wanted it. She would serve it with eggs and potatoes. We always put it on homemade bread. As a kid growing up, it's the one thing I use to love about being at Grandma and Grandpa's house every morning. Was the smells of the kitchen when Grandma was cooking breakfast.
