I've been trying to find that out as well. I'm pretty sure the Greek sounding bit is a bouzouki but can't be sure.
I think it's a bassoon you hear at the beginning. I'm just starting to get into classical instruments so i don't know the rest.
I'm only an ex-drummer, but I have a pretty good ear. Here's my theory on two separate versions of the theme song. Use the YouTube links below as a reference.
at :00 - tympani, bass guitar, keyboard (Fender Rhodes or equivalent setting), Electric Guitar, drumstick held against snare drumhead and rim. Keyboard provides basic "vamp," with electric guitar embellishment.
at :20 - clarinet (also at :45, 2:13, flourish at 2:38)
at 1:35 - added electric guitar with distortion
at 2:56 - electronic note bending as sound effect.

What prompted me to look for instruments used in the theme song? I want to know what instruments are involved in the twice-played chord "Pom-Pom" transition used throughout all the shows.
I think I'm hearing a metallic pop that I would associate with a xylophone, plus I'm guessing it's the keyboard and some reverb. Interesting and instantly identifyable chord, also.

I think it was an orchestra with a lot of strings.
