Because America at the time, felt it was their right and duty to expand across the continent to to Pacific. The US wanted California for its great port cities along the Pacific, cities such as San Francisco and San Diego. James K. Polk also wanted to gain California from Mexico because he did not want the British to claim it.

At the time the US was interested in expanding westward towards the pacific in general. (Manifest Destiny) Texas, Oregon, California, and New Mexico where all territories that the US was interesting in obtaining. James K Polk and the democrats were interested in annexing California mostly for its port cities along the Pacific such as San Francisco and San Diego. Polk believed the British were also trying to obtain California. Ports run the economy and Polk did not want those great ports to become British territory.
