They get angry because the alcohol affects their better judgment. I guess it's kind of the same thing as being high(You don't know what you're doing!)

For alot of people alchohol does not impair their judgment and it doesent stop people from knowing what they are doing. Alchohol can increase violence however, if two different belief systems are engaged with each other during the intoxication of it, exactly the same if there was no alchohol present.

it is just a difference in speech, same as calling a garage sale a yard sale & vice versa. Soft drink also refers to the drink not being a hard drink (a hard drink is a drink with alcohol). Since soda/soft drinks do not have alcohol, they are called soft drinks.
