Actually he did not lose his eye while battling Bradly. At the end of the fight he still had both eyes.
It is possible that his eye may have been damaged during the fight and he uses the patch to cover it up.
If he did in fact lose his eye then it was when Archer shot him as he was leaving Bradly's house. After he is shot Roy's face is shown covered in blood when Hawkeye shows up to help him. (This could also have only damaged his eye.)

That is unless you are talking about the manga. In the 2003 manga he lost an eye. In the manga and 2009 anime he loses his eyesight, not his eye.
In the movie Roy Mustang only lost one eye. He became only enlisted and was posted up north. In the manga, the door to hell takes his sight when he is forced to do human transmutation by Pride. As of right now the manga hasn't ended so no one knows what will happen. Lt. Hawkeye will most likely help him.
Roy does not die. He got shot in the eye and Riza took him to the hospital where he recovered but has to wear an eyepatch over his left eye for the rest of his life.
In the 2003 version he loses his left eye in brotherhood he loses both sight but gains it back near the end
