∙ 14y agoIf you are talking about the process of canning, of course they should be airtight. The hermetic seal must be maintained to assure the safety of food.
If you are talking about something like a cookie tin, many foods benefit from being airtight. But items that respire - like fresh fruits and veggies - would quickly rot in an airtight container.

∙ 14y agoBecause the cans are airtight which keeps the freshness of the food , and it keeps the oxygen out which means that bacteria wouldn't be able to survie. Even though the food would eventually go off it would last a long time in a can.

Another reason would be that the container would limit the exposure to mold that is carried in air which would spoil the bread.
