I would heat cooked pork, that was left out over night, for at least ten minutes in a 350 preheated oven. Cooked food that was left out over night should always be reheated or boiled before eating. Freda

What you are really asking is, "Is cooked pork left out overnight safe to eat". There are several possible answers:

  1. Maybe. If the place where the pork was sitting was as cold as a refrigerator and no rats, mice, cockroaches, flies (nor anything else) contaminated it, then it would likely be safe to eat if it was safe to eat before it was left out.
  2. No. The meat was kept in the temperature danger zone for too long and pathogens are all over the meat and will make you sick.
  3. We don't know. Without laboratory tests, no one can tell you whether or not the meat has become unsafe, but a food safety person would not risk allowing anyone to consume it.

The food safety time/temperature rules are designed to take the guesswork out of making and serving safe food.

Meat should always be stored in a cold place, for as short a time as possible, before cooking.

Leaving raw meat out exposes it to insects and contamination. The meat's own bacteria will develop if the meat is not cold enough and the meat will go bad.

Cooked pork that is re-heated to at least 160 degrees should be OK to eat. Uncooked pork is problematic.

What I would do -- THIS IS NOT A RECOMMENDATION -- is smell it. If it smells OK, I would wash it thoroughly under running water, then cut it into 1 inch chunks and cook it in a stew with the temperature over 170 degrees for at least twenty minutes. Bring the temperature up slowly and the meat will stay tender.

If the meat was cooked and left out overnight, you are risking the health of anyone who eats it. Cooking meat removes all the bacteria and leaves pathogens with unchallenged growth. Depending upon what pathogen might have taken hold, you might not be able to cook it safe. This does not mean that eating it guarantees illness, but I would not recommend using it.

I would also not recommend using it if the meat was raw and left out. In the end, you are the one who will have to make the decision. The old adage is useful: When in doubt, throw it out.
