If by chance people staged such a fight, the bear most likely. Grizzly bears can kill bison, and the polar bear is at least as strong.

Well, this fight most likely wouldn't happen, a polar bear against a leopard? Although it is most certainly an excellent and curious concept, I would say polar bear, though leopards are quick, in this case I think the sheer brute strength of the polar bear would win out.
