JKR never actually tells us, unfortionatly, but I imagine them both to be twin foxes. It fits their personalities quite well.
Neither of the Weasley twins' Patronuses are known. Actually Fred Weasley's patronus takes the form of a Hyena. I know you didn't ask but George Weasley's patronus is a Coyote.
The book does not say. It only says that he produces a silvery wisp (a futile try at a Patronus.)
