According to the book series, the position is "cursed" when Lord Voldomort was denied the position. Because of the curse, No one can hold the position for more than a year.

Professor Quirinus Quirrell: Taught in Harry's first Year. He had Lord Voldomort fused to his head, which kept hidden by a Turban he wore. Harry Battled the small voldomort in the final scenes, destroying Quirrell in the process

Professor Gildeory Lockhart: The famous author, who was more hurt then help, taught Harry and his friends in their second year. He ended up following Harry and his friends into the Chamber of secrets, when one of his famous Memory Charms backfired and he forgot who he was. He is currently a live-in patient at St Mungos.

Professor Remus Lupin: Professor Lupin was by far the most qualified of all the Defense against the Dark arts professors at Hogwarts. He tought the students all sorts of useful spells and charms, including Harrys, now famous, Patronus Charm. However, 'someone' slipped that he was actually a werewolf, and resigned from the position before Parents could catch wind, and he was chased out of the position. It is rumored that that 'someone' was Snape.

Professor Alastor "Mad Eye" Moody: An Ex-Auror from the Minstery of Magic, came to help as a personal favor to Dumbledore. First Professor to give real life examples of the 'Unforgivable Curses' in class. Turns out, Moody was not Moody at all, but rather Barty Crouch Jr. and some polyjuice potion. Later Dumbledore finds the real Mad Eye Moody locked in a trunk in his office.

Professor Dolores Umbridge: When the Minister of Magic decided to make Hogwarts 'Ministry Approved' Dolores was called in as the new DATDA Teacher. She proposed that teaching the theory of defense was good enough for their O.W.L.S. , so there would be no need for wands at all. She was chased off.

Professor Severus Snape: As you may know, Snape has been pining for this position since he started as a professor at Hogwarts. However, Dumbledore would not allow it. (perhaps out of fear he would return to his old ways?) However, Snape is only the DATDA Teach for one year.

Professor Amycus Carrow: A Death Eater. He teaches Dark Arts in the 7th book. When the Death-Eaters take over, Snape is made Head Master. The class name is changed from "Defense against the Dark arts" to just "The Dark Arts" as was explained to Harry upon his return to the Hogwarts Castle.

After Voldemort was refused the job, the position was said to be cursed so that no teacher could hold that position for more than a year. As you can see on the list of teachers from when Harry was a first year to the time when he was supposed to be a seventh year, no one in Harry's time of being at school has held the job for longer than a year. But I'm not sure who had the job after he was denied.
