There are several different versions of cotten eye joe. The generic version that you would do, say, at a wedding or such goes as follows:
1-2 Tap right toe forward twice
3-4 Tap right toe back twice
5 Tap right toe forward
6- Bring right foot up in front of left knee
7- Point right toe out to side
8- Bring right foot behind left knee
9-12 Weave (Step right to side, cross left behind, step right to side, bring left home next to right)
13-16 Do 2 full turns counter-clockwise while waving right hand in air in circular motions
Now there is actual cotten eye jow line dances which are much more complex, but those vary from region to region so it all depends on the area in which you live and how that bar does them. Good luck, have fun!

I take dance lessons, and I danced to a few country songs trough out the years.. Tap Counrty Songs It Happens- Sugarland (AMAZING song. Did it for my solo) Jazz Country Songs These boots are made for walking- Jessica Simpson (I did it to a jazz routine) There is clog dancing, square danc, ing, line dancing, hoedown dancing and side step dancing, also that you can dance to with a country song.....
There is a song by LeeAnn Womack called "I Hope You Dance." I'm not sure if that is what you are looking for, but it's a very good song. There's a song by The Nolans called I'm In the Mood for Dancing that includes a line, so dance... just dance..., but I wouldn't really call it country.
