The same reason most animals that have whiskers do. It's part of there sense of touch. With seals, their whiskers help them sense slight changes in the movement of the water, helping them chase after prey and avoid predators.

Like most mammals with whiskers, walruses use them for sensations to provide data: to sense whether an opening is large enough for their head and body to get through and to sense when something is close to their snout or eyes -- if they feel something on the whiskers they'll protect the nose or close the eyes (dogs do this when you touch the whiskers around the eyes). Walruses go further, though, using the whiskers in the water to sense movements close to them -- handy for detecting nearby prey (a fish close to the mouth) or predators (an orca's swim trail).
