Science projects, like science itself, would normally involve measuring. Measuring gives meaningful data. As for a good science project, I might suggest that you obtain several cages of lab mice, and feed different mice different kinds of food (one cage gets cheese, one gets potato chips, one gets raw turnips, etc.) for some period of time, perhaps a week, and then you can weigh the mice and see how different diets affect them.
