A serving of coleslaw is three quarters of a cup. To feed 250 people, you should probably make around 250 cups of coleslaw.

I would make 35 pounds.
You will need 3 to 4 gallons of coleslaw to feed 100 people. It will take one pound of cabbage for every 5 people.
A lot!

100 slices of ham
Depends what else they eat with it.
2.75 pounds
It depends on how much other food their is. If you're serving a main course where coleslaw is one of a few sides, figure most people won't take seconds (1/4th of less), meaning 1/3lb of coleslaw per person should be plenty. That would place you at around 13lbs (ish). If you're serving only one side dish, and it's coleslaw, figure each person might eat half a pound, putting you at 20 lbs. If you have 6+ sides, each person might not even take coleslaw, meaning you'd need even less. 10 lbs should be plenty in this situation. So, again, it all depends on how much other food there is.
About 6 pounds of salad.
