I have done this for years and never had a problem. I have left cheese out overnight and used it. It was fine.
That will depend upon the type of cheese and the available microbes - which are unknowns. If the cheese is a type that should be refrigerated, it should not be left out overnight and then consumed, regardless of whether or not it is cooked.

When can bacteria get into foods?
Bacteria can get into food anytime the food is uncovered. The issue is whether they can grow in the food to the point that they become a problem. If you keep cooked food cooler than 40F or hotter than 140F, the bacterial can't grow. If the food is between these two temperatures, don't let it stay there for more than 2 hours without heating it above 160 for 1 minute to kill any bacteria that grew.

Its not the cheese that is the issue its how its stored at home and the unwashed stuff that's in your home fridge that makes the cheese a magnet for bacteria. Try going to Waitrose and speaking to the cheese specialist, who have qualifications in the cheese industry they will give you the correct advice.
