You should spend time with both to decide your personal preference. But some generalities can be made, they just don't apply to every dog, every breed, or every situation:
Male dogs are often more snuggly and cuddly as they get older. Males can be more aggressive to other dogs, especially if not neutered. Males tend to mark their territory more than female dogs, although both will do that, males will more often do it inside if they are intact (not neutered). Intact males can have medical problems from enlarged prostates as they age. Males can get very whiny and agitated when a female in heat is within scenting distance and will mate (in sometimes very sneaky ways) if given any slight chance to get in contact with a female in heat. Males are often better watch dogs, although females with certain personalities or with certain owners (who do not represent themselves as the alpha of the family pack) will also take on that job if they think no one else is. It is not my experience that male dogs are hard to train.
Female dogs will have cycles of reproductive symptoms (going into heat and needing "diapers" inside for the small amounts of discharge during their "season", needing to be kept separate from male dogs at those times~ which often is not an easy task, etc.) unless they are properly spayed ("fixed"). They will present you with puppies if you don't spay, which you should always do if you are not planning on a responsible breeding program. Females will more likely kill your grass from their urine since adult males raise their leg and spread their urine in smaller amounts around the property. Females can get vaginal infections so you need to keep watch for those symptoms especially if they are a long-, wiry-, or double-coated breed. They can get breast masses as they age, feel for little B-B sized lumps frequently when you rub their tummies. They can be aggressive to male dogs when "in season." They tend to be a little more aloof. They are equally easy or hard to train as males are, depending on the dog and the trainer.
It depends what you prefer. Personality varies greatly from cat to cat and don't depend on gender. It may be best to look for a cat whose personality matches what you want in a cat, and not just the gender.
Female dogs usually don't grow as large as males, but can be just as protective, if not more so. More often than not a female will bond with an entire family, whereas a male will generally bond strongest with the "Alpha" or "head of the house." In my experience females are easier to train and generally do better with new babies in a family.

It really depends entirely on the individual animals. Typically, male dogs who haven't been fixed are more territorial than females, so based on that knowledge I would suggest a female. However, I have 2 male dogs and 1 female who all get along just fine in a house with a male cat. So, again, it just depends on the specific cat and dog.
