The edge of a knife is very thin, often a few molecules thick. The thin edge will then apply very high force per unit of area, splitting the material being cut, separating the molecules of the material being cut.
A knife is sharp for 2 main reasons:
Increases the performance of it as knives are made to cut. The sharper the edge-the easier it splits material apart.
It is also for safety reasons. Dull knives requires more force to cut therefore the chances of slipping with them is greatly increased. Cuts from sharp knives also heal faster due to the cut being "cleaner".

A sharp knife cuts much better than a blunt knife. A sharp knife is less likely skid off and cause an accidental wound.
