The reason is that during interphase nuclei are not resting! Nuclei are expressing their genes to make the proteins neede by the cell eg enzymes. Also, it is during interphase that the DNA is replicated before the next cell division. See: http://en.wikipedia.org/wiki/Interphase

During interphase there is much metabolic activity.

Some examples of processes that take place in interphase are: transcription and translation; DNA replication (which occurs at mid-interphase); glycolysis in the cytoplasm; aerobic respiratory reactions in mitochondria; both light-dependent and light-independent reactions of photosynthesis in chloroplasts; digestion in lysosomes; lipid synthesis in the smooth endoplasmic reticulum; protein processing and modification in the Golgi body.

So it's not too restful between divisions!

Interphase represents the phase of the cell during which it is preparing itself for cell division. During interphase, proteins, enzymes and other energy molecules are formed for DNA replication which is needed for cell dividion.

But all this processes can be seen in high powered microscopes. In earlier days, there were not such microscopes. And hence those people could not observe any activity during interphase and named it as resting phase.

But it is misnomer.....

Interphase in the cell life cycle is a period where the cell carries out its typical functions in preparation for cell division. It is inaccurate to say that it is 'resting' because it is still producing energy and using DNA replication to prepare for Mitosis.

Likely because the cell is not actually resting - cyclins are being activated and deactivated, new cell materials are being created, the genome is being duplicated, although the main phenotypical differences occur during meiosis/mitosis

The term "resting stage" is misleading beause the cell is actually still functioning during this stage, but in the past it was not thought to be. Simple as that.
