First, there's no reason to, and second, a spacecraft large enough to simulate it hasn't been required yet.
There's also the engineering and design requirements. Such a spacecraft would require more material, money, and equipment than countries, consortiums, and corporations are currently willing to fund. The original International Space Station design was much more elaborate than what was eventually agreed upon and built due to budget limitations.
Essentially when it comes to space exploration, there has to be a need for something in order for it to become a design, the funding, and then a manufactured reality. As I said in the beginning, there's just no definitive need for it at this point in time.

It does. Astronauts on the moon can jump higher than they do on Earth but they still come back down. The moon's gravity is weaker than Earth's because the moon has less mass.
