Turtles bite when they feel threatened, or if they mistake something for something edible (i.e: fish). They will not let go easily if you try to pry them off. It's not very hard to provoke a turtle, maybe if you poke it repeatedly on it's mouth.

It is quite common for a male to be biting a female in order to try and force the female into mating. Also, males bite to deter other males from stealing mates, or sometimes, just natural instincts.

Two possible reasons--competition for food/territory/resources, or mating activity. If you see a lot of this going on, you need to separate the animals into different enclosures.

They only bite for two (real) reasons: 1) To eat 2) For defense - note that in some cases they will hit you with their front legs but not bite (a warning shot if you will).
